In the production of grilled cheese, cooking takes place in open vats at various stages. This means that a lot of water vapor is released into the production room during cooking. The moisture level rises to excessive levels, which both creates a poorer working environment and increases the risk of moisture damage in the premises.

Previously, the moisture problem was partially addressed by increasing ventilation and air flow. This solution worked during certain months of the year, but it was not optimal. In addition, energy consumption increased significantly when ventilation and temperature were used to control humidity.
